Of particular note is that the process, as shown, does not involve any sophisticated equipment, but solely relies on such natural phenomena as sun drying and mold fermenting the leaves.
First, tea leaves are fried in a pan at certain degrees in a natural way – burning some wood – so as to inactivate enzymes. This is followed by rolling fried leaves, a step that is not clearly illustrated in the diagram. Then, the leaves are left to dry in the sun for some time, resulting in loose raw tea.
From this step on, the process takes 2 different trajectories. Loose raw tea can be compressed to form Pu-erh raw tea, which is then stored for aging, and eventually becoming vintage. Alternatively, the process can be proceeded by fermenting using mold, resulting in ripe tea. The final stage involves compressing it, leading to a product available for consumption.
