The diagram illustrates the steps by which soft cheese is produced. Overall, the process consists of 9 main stages, beginning with acidification that includes the combination of raw milk and bacteria and ending with delivering shops.
The first stage takes place in the process of acidification where raw milk is combined with bacteria and enzymes are added. This causes the milk to solidify, forming curds. in the next stage, the curds are cut into small pieces to pass heating and draining stage. There, the curds are heated and drained to remove excess liquid.
Once the curds are heated and drained, they are mixed with salt to enhance their flavour.The next stage occurs at the shaping process to shape the many curds into rectangular blocks. The shaped curds are left to ferment for 2 months in the fermentation stage which they can develop flavor.
Finally, the end result is soft cheese, ready to be packaged. Once the packaging stage is complete, they are immediately delivered to shops to be sold and consumed.
